Characteristics:

* Colorless, transparent sheet or a white granular crystals, easily soluble in water, melting point 616 ℃ (decomposition), relative density 2.484 g/cm3 (20 ℃), high hygroscopicity, can absorb water and become glue-like exposed in the air.

Application

* For meat, fish, sausage, ham, etc., it can increase the water retention and binding capacity, and prevent lipid oxidation.

* For soybean paste and soy sauce, it can prevent discoloration, increase viscosity, shorten the fermentation period, and adjust taste.

* For fruit drinks and soft drinks, it can raise the juice yield, increase viscosity, and inhibit decomposition of vitamin C.

* For ice cream, it can improve expansivity and volume, enhance emulsification, prevent damage to cream, and improve taste and color.

* For dairy products and beverages, it can prevent the gel precipitation.

* For beer it can improve clearness and prevent turbidity.

* For beans, canned fruits and vegetables it can stabilize natural pigments, and protect the food color.

* Sodium hexametaphosphate solution can improve the preservative capacity if sprayed on the cured meat.

* It can be used as improver, water retainer, emulsifier, chelating agent, stabilizer, water softener, pH regulator and thickening agent.

 

Usage

* Usually used in solutions.

 

Dosage

* Frozen seafood products, milk powder, butter powder, meat products, fish products, juices, ice cream, instant noodles, 5g/kg

* Ham can use a little more but total phosphate ≤ 8g/kg

 

Storage:

* Store in a cool dry place. Shelf life is 2 years.
